One Chef, one Fermento beer – “Deconstructed Cannolo with beer Stout” a Dessert by Dennis Parrotta

The fine beer-flavoured “Deconstructed stout cannoli” (Cannolo scomposto alla Birra) is a delicious variation of the iconic Sicilian Cannolo, a fried rolled bubbly wafer filled with sweet ricotta cheese. In this dessert recipe, the waffle is deconstructed (broken down) and sprinkled over the ricotta cream, enriched with a touch of Fermento Liberica stout-based sauce, which imparts a refined chocolate and coffee flavour.

Easy to make, deconstructed stout cannoli is ideal for a quick after-dinner dessert that requires very little preparation time. It is a dessert for everyone, friends, family and children. No alcohol, no coffee, no chocolate, but lots of flavour and fun. Enjoy!

Ingredients and quantities for 4 people

Step 1

Reduce the Liberica stout by boiling it in a saucepan for 5 minutes. Add cornstarch diluted in water to thicken to a paste.

Step 2

Put the buffalo ricotta and icing sugar in a planetary mixer and whip for 10 minutes.

Step 3

Add the beer reduction and mix with a whisk.

Step 4

Put the Ricotta and beer paste in a pastry bag. Spread the cream on a flat plate.

Step 5

Crush the cannoli wafer and place it on top of the cream.

Step 6

Grate some lime zest on top of the dessert.

Enjoy it freshly made, when the cream is cool and smooth and releases an incredible coffee and bitter cocoa flavour from the special taste of this award-winning Liberica stout. Add a lime zest for a more refreshing citric feel or more Liberica reduced cream if you prefer a bitter chocolate flavour.
