The fine beer-flavoured “Deconstructed stout cannoli” (Cannolo scomposto alla Birra) is a delicious variation of the iconic Sicilian Cannolo, a fried rolled bubbly wafer filled with sweet ricotta cheese. In this recipe, the wafer batter is broken up and sprinkled over the ricotta cream. enriched with a touch of Fermento Liberica stout-based sauce, which imparts a refined chocolate and coffee flavour.

Step 1
Reduce the Liberica stout by boiling it in a saucepan for 5 minutes. Add cornstarch diluted in water to thicken to a paste.
Step 2
Put the buffalo ricotta and icing sugar in a planetary mixer and whip for 10 minutes.
Step 3
Add the beer reduction and mix with a whisk.
Step 4
Put the Ricotta and beer paste in a pastry bag. Spread the cream on a flat plate.
Step 5
Crush the cannoli wafer and place it on top of the cream.
Step 6
Grate some lime zest on top of the dessert.
