Wheat beer (or white beer) is refreshing and has a mild bitterness. This beer style originally comes from Germany (Wheat) and Belgium (Witbier).
They contain a high proportion of wheat, hence the name ‘Weizen,’ which means wheat in German. In general, a ratio of 1:2 between wheat and barley malt is typical. The classic German wheat beer contains malt, wheat, yeast, and hops. Belgian white beer contains two additional ingredients: orange peel and coriander.
The characteristic fruitiness of wheat beer mainly consists of banana notes and originates from the yeast. The clove aroma is also conveyed by the yeast. Since the yeast remains in the beer, it is characteristically cloudy, except for crystal wheat beer, which is filtered from the yeast and therefore has a less fruity aroma as well.
A higher carbonation level, which provides a particularly refreshing sensation, combined with a mild alcohol content, makes wheat beer a top choice for the summer.
The optimal temperature for serving wheat beer is 7°C (44°F). Traditionally, chilled and rinsed vase-shaped glasses are used. As the yeast settles at the bottom, you should pour the beer in two steps to achieve the best taste and aroma experience.
Pour most of the beer into the glass, leaving 2 cm in the bottle.
Swirl the remaining beer in the bottle to collect the yeast from the bottom, and then pour it quickly into the glass to ensure that it floats in the beer.

- Cheese – wheat beers go very well with soft cheese. Especially Burrata, an Italian cheese with a creamy center. It is eaten alone or with some olive oil and is often served with freshly cut tomatoes. Even mozzarella and goat cheese are a good choice.
- Salad – Classic summer salads like Caesar salad with or without chicken, Greek salad with feta cheese, or a simple Caprese salad with basil pair excellently with wheat beer.
- Fish – Wheat beers are among the best beer styles that pair well with fish dishes, especially with fried ones, but also with raw dishes like sashimi and sushi. The Belgian wheat pairs very well with it due to the slightly citrusy taste of the orange peel.
- Desserts – Cakes and pies with fruit bases or pudding cream are optimal culinary companions for wheat beer.
