Grains and malt

In June, it was harvest time on my family’s farm in Italy, and my earliest memories are the smell of grain and malt I remember hot summer days, everyone busy with the harvest work, and sneaking into the barn where I discovered sacks piled around a mountain of grain. That was truly impressive, especially for a little boy. Certainly, it was the only possible thing to climb onto the sacks and jump into the grain. I am still amazed by the innocence of youth, which allows for such adventures without thinking. The smell and the texture were heavenly, pure joy. Despite my efforts to dust myself off, I was always discovered by my grandmother, and it’s no wonder that every seam of my clothing was dripping with grains. These memories are the foundation of my craft, my passion, and the inspiration for Fermento Beer.

Yeast

Microbiology was the path I chose for my studies. I completed my research studies in the renowned Department of Microbiology at the University of Agriculture in Perugia, Italy. The knowledge and skills I acquired about yeasts were invaluable. I decided to pursue postgraduate studies in Dundee, Scotland. On Fridays, we had the tradition of continuing our discussions about yeast and fermentation with Professor Graeme as we made our way to the local pub. The discussions fell silent as soon as we had a pint in hand and savored the first sip. These experiences and this education have brought my craft and passion to life and are the inspiration for Fermento Beer.

Hops and water

When I worked for a biotech company in Switzerland, it was fortunate to learn about this land of glaciers that provides the purest water. Abel, whose wife did not allow him to set up a home brewing system in their house, brought his equipment into my kitchen. Fascinated by the world of hops, often supported by my sweet daughter Sara, we brewed everything we could imagine. We learned and discovered the effect of hops on the balance of freshness and intensity. I am Italian, and Abel is Spanish. We always returned from visits to our families with the finest handmade cheeses and hams that our countries had to offer. Balance

My philosophy has always been to live life to the fullest, guided by passion and intelligence. A balanced life between work and strong connections to family and friends is the benchmark for quality. I am of the opinion that quality far outweighs quantity, especially when it comes to the foods and drinks I have selected. That’s why Fermento Beer has the highest quality and the highest standard of balance from my life experience and passion.
